End of summer–Football’s on the TV, happy children are playing outside, and the smell of my mother-in-law’s Super Chicken fills the house. (She’s not actually here. She just supplies me with all my best recipes). She definitely has Jedi skills in the kitchen. Everyone loves this dish.
2 lb. chicken breast
2 cans cream chicken soup
1/2 c. milk
1/4 c. chopped green pepper
1/4 c. chopped celery
1 sm. onion, chopped
2 T. lemon juice
2 T. Worcestershire
Mix and bake uncovered at 350 degrees 1 hr. 15 minutes. Can add butter slices during last 15 minutes.
I’m serving it with Jasmine rice and wax beans.
We’re going to enjoy some late summer family time and ride to the local DQ after dinner for some dessert. That’s good living.

Mmm, that sounds yummy AND easy. Maybe I’ll try it tomorrow, I’ve had just about all the take-out a girl can stand for a while.
Yummy! I have had this recipe topped with buttered breadcrumbs and served over egg noodles. But I do so lurve me some rice. And DQ? Oh lordy girl, I am on a fat free diet. I am so very jealous. I’ll just live vicariously through you ’til this weight comes off.
My theory is, when you ride your bike to the ice cream shop, you don’t have to feel so guilty about the ice cream. But you can’t feel too great about the exercise either. It’s a wash.
I’ve made that, except the green peppers sounded WONDERFUL….hadn’t thought of that one.
